Banana Bread
Adapted from http://allrecipes.com/recipe/20144/banana-banana-bread/. Good as is, or add 3/4 cup of nuts, chocolate chips, or other fruit.

Banana Bread
A good base open to modification. Add more bananas, adjust spices, sprinkle with sugar for a sweet crust, etc.
Ingredients
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup butter
- 1/2 cup brown sugar or amber (or mixed)
- 1 tsp vanilla extract
- 1/2 tsp nutmeg
- 1/2 tsp cinnamon
- 2 eggs beaten
- 1 2/3 cup bananas over-ripe, mashed (about 4 bananas)
Notes
- Preheat oven to 300 degrees F (150 degrees C). Lightly grease a 9x5 inch loaf pan.
- In a large bowl, combine flour, baking soda, baking powder, nutmeg, cinnamon and salt. In a separate bowl, cream together butter, sugar and vanilla. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
- Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
